It seems like a lot of people love dark chocolate but for some reason it is rare to find a dark chocolate cupcake. The key to these cupcakes is to use high quality cocoa powder. Here is my version: ingredients :
chocolate mayonnaise cupcake
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1-2/3 cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 cup mayonnaise
- 1 cup water
dark chocolate frosting
- 1 cup confectioners sugar
- 1 cup unsweetened cocoa powder
- 1/4 cup butter (1/2 stick), softened
- 8 oz cream cheese, softened
- 1 teaspoon vanilla
directions
- Preheat oven to 350 F
- In a medium bowl, whisk together flour, cocoa, baking soda, and baking powder; set aside.
- In large mixer bowl with paddle attachment beat sugar, eggs and vanilla until light and fluffy on high speed, about 3-5 minutes. Add mayonnaise, reduce speed to medium and beat a couple of minutes longer.
- Add flour mixture to batter, alternating with water- starting and ending with flour. Pour batter into cupcake liners and bake for 12-15 minutes or cake tester comes out clean.
- For the frosting, beat together the butter and cream cheese together. Add vanilla.
- Sift cocoa and sugar together, beat into butter mixture.
- Frost cooled cupcakes with chocolate frosting. Enjoy!
